CANTERBURY-BANKSTOWN HERITAGE SPOTLIGHT
Standing beside the Cooks River in Canterbury, the Old Sugarmill is one of Sydney’s most remarkable industrial heritage buildings and a defining landmark within Canterbury-Bankstown. Constructed between 1839 and 1841 for the Australian Sugar Company, the five-storey sandstone mill is believed to be the oldest surviving industrial building in the Sydney region. Over almost two centuries, it has evolved from a pioneering sugar mill into a foundry, butter factory and processed food manufacturing facility before being carefully restored and adaptively reused as apartments, preserving one of New South Wales’ most significant industrial heritage sites.
The Old Sugarmill is significant for its historical, architectural and industrial heritage. Its construction marked one of Australia’s earliest attempts at establishing a local sugar industry and it later played an important role in Canterbury’s industrial development through a succession of manufacturing uses. The building is also recognised for its symmetrical Georgian architecture, imposing five-storey sandstone construction with walls approximately one metre thick, and its landmark position overlooking the Cooks River.
The Old Sugarmill tells the story of how industry helped shape Canterbury-Bankstown. Beyond its role in sugar production, the building adapted to meet the changing needs of the community, serving as a foundry, butter factory and the well-known Canterbury Bacon Factory. Its continued evolution reflects the resilience and innovation that characterised the area’s industrial history and contributed to the growth of the surrounding suburb.
The Old Sugarmill is an outstanding example of adaptive reuse and heritage conservation. After years of neglect and significant fire damage in 1996, the building was carefully restored and transformed into a residential development in 2003. Rather than losing one of Sydney’s most important industrial heritage buildings, the project successfully preserved its distinctive sandstone structure, Georgian character and landmark presence while giving it a new purpose for future generations.
